Food For Fitness

Wine Tasting 101

Ever wonder what swirling wine in the glass was about? What do the “legs” really mean? This two hour class will show you how to understand and appreciate wine. To be held at Libation on the plaza in Arcata. This is the first class of their four class wine appreciation series and can be used for that series.

Knots Seminar

Outdoor enthusiasts use an assortment of ropes and knots for outdoor skills. Many of these same knots can be useful for a variety of everyday uses, ranging from camping, climbing, sailing, loading vehicles, and more. This seminar will cover various knots including hitches, bends, loops and other important knots. If you would like to have the mystery taken out of knot tying, this class is for you!

ACA Instructor Certification Workshop for Whitewater Kayakers

October 17 - 19 & October 25 - 26
Learn to be a fun, safe, and effective whitewater kayak instructor! This course will help aspiring instructors improve their teaching abilities, while adhering to the ACA’s golden standard of excellence. We will explore teaching styles, as well as student learning styles, practice teaching skills and giving presentations both on and off of the water. The course will cover teaching progressions for hard skills and boating concepts. You will also have lots of opportunity to hone your own personal paddling skills and technique. Candidates are tested on teaching ability, technical knowledge, and the ability to perform rescues and maintain safety. Modeling ability, paddling skill, and communication skills will also be assessed. This class is tons of FUN, and a great opportunity for personal paddling and instructional growth. The ACA is a world-wide organization, dedicated to promoting safety and education in paddle sports, and the golden standard for kayak instruction in the country. For more information about the American Canoe Association and this certification, please visit www.americancanoe.org/?page=Become_an_Instructor.

Day and Time: 
Level 1 certification concludes at the end of the first weekend. Levels 2 - 4 must attend both weekends. In general, we will meet every morning at 8:30 AM and participants should expect to be on the water until 5:30 pm. Some times and locations may change during the class depending on conditions.

Notes: 
Participants will travel to the Trinity River for the weekend. You will have the option of camping out on the river, or commuting to class every day. Participants that cannot provide their own gear will be able to rent from Center Activities at a discounted rate.

Making Chocolate Dipped Strawberries

October 11
Learn to make chocolate covered strawberries the easy way from a professional Chocolatier. Sandra Nakashima, founder and co-owner of Drakes Glen Creations will show you how to make artisan dipped strawberries. You will learn how to temper real chocolate, then dip strawberries and decorate. You will leave the class with the berries you dip and a deeper understanding of what goes into making chocolates. This is a fun class and no previous chocolate skill is needed.

Eureka Slough Canoe Tour

From Wiyot tribal history to Alexander von Humboldt, there is no better way to connect the past and present than to canoe the waterway at our doorstep. This 3-hour tour gets you behind the scenes of storefronts and into the natural ebb and flow of timeless Nature.

Moonrise Paddle Tour

Come for a Saturday evening paddle and watch the moon rise through the Humboldt Bay mist. We provide a choice of kayak or canoe and experienced guides to run these short hour and a half adventures.

Intermediate Surfing

October 12

Are you ready to get out of the whitewater and surf real waves? Join us for the continuation of Introduction to Surfing with a progression of skills from paddling out to the line-up to negotiating the waves. Surf gear is provided, or you're welcome to bring your own. Transportation will be by carpool.
